Foodesco has worked with Jacqui for almost 10 years, starting with the design consultancy for a new kitchen and servery within the MMU Business School and Student Hub building back in 2008, where we collaborated from an early stage to ensure the offer and consequent designs could compete with the high street. This period started a new direction for foodservice within the university involving a complete overhaul of menus and new employment structure.
Since that initial project it has been very satisfying to visit the university and experience the successful, busy catering outlets.
As a consequence of business growth and other redevelopment projects we are proud to have subsequently collaborated with Jacqui on numerous other projects as she led her team, developing new ideas and through a period of significant change, such that over this time we have come to feel an extended part of that catering team.
A passion and a wealth of knowledge and experience for hospitality and allergen management
Jacqui McPeake has been involved with TUCO for a number of years, representing Manchester Metropolitan University (MMU). Jacqui has immersed herself in TUCO activities representing members on a number of groups. Over the last 2.5 years, Jacqui has been Chair the Northwest Region, promoting TUCO and engaging the members to support TUCO initiatives with enthusiasm and absolute commitment.
Jacqui presented a seminar on Allergen Management within Universities at the TUCO Conference in 2017. More recently Jacqui has led a project with TUCO, to create a Code of Practice for Allergen Management.
Jacqui has a passion and a wealth of knowledge and experience for hospitality and allergen management. She has led her team at MMU to win awards for their knowledge and processes on Allergen Awareness.

Personal commitment and passion
Jacqui and I worked together at Manchester Metropolitan University where she led the development of the University’s catering service. During this time she ensured training and legal compliance across the operation of a £4m business serving a population of over 30,000 staff and students.
Jacqui made what was a compliance requirement for staff allergen training and labelling into a personal crusade. Her mission led to the university achieving several awards and the personal recognition and respect with suppliers and professionals in both the Higher Education Catering and wider catering sectors.
Jacqui has excellent people skills and a great ability to translate compliance matters to the front-line teams through engaging and fun implementation plans that stick.
